About Wagyu & Wagyu/Angus Cross

What is Wagyu Beef?

The word Wagyu simply translates from Japanese as "Japanese cattle" (Wa meaning Japanese, and gyu meaning cattle). Originally draft animals valued for their physical endurance, these cattle developed a unique genetic trait: high levels of intramuscular fat—commonly known as marbling.

Unlike conventional beef, where fat is stored largely on the outside of the muscle, Wagyu fat is intricately distributed inside the muscle fibers. This fine web of marbling melts at a remarkably low temperature (often lower than body temperature). When cooked, that fat renders into the meat, creating its legendary buttery texture, rich aroma, and exceptional juiciness.

What is F1 Wagyu/Angus Cross Beef?

F1 Wagyu refers to the first-generation offspring of a Fullblood (100% purebred) Wagyu parent (typically a bull) and a traditional beef breed parent—most commonly Angus.

Here is why the F1 cross is so popular among farmers and meat lovers alike:

  • The Best of Both Worlds: F1 cattle inherit roughly 50% Wagyu genetics and 50% Angus (or other breed) genetics. This blend captures the extraordinary marbling and tenderness of the Wagyu breed while incorporating the robust, beefy flavor profile and strong performance traits of breeds like Angus.

  • Superior Marbling: While a fullblood animal offers extreme marbling, an F1 cross reliably produces a high degree of fine marbling that far exceeds standard USDA Prime beef, making it a favorite for high-end dining and home cooks looking for luxury without the pure-breed price tag.

  • Balanced Yield: Purebred Wagyu can sometimes yield a lighter-framed animal with a higher fat-to-meat ratio. Crossing it with a beef breed like Angus typically creates a sturdier carcass with a balanced ratio of rich, marbled steaks and hearty everyday cuts.

Our Wagyu Cows

Our herd brings together the best of traditional Japanese Wagyu genetics and carefully selected modern Australian Wagyu genetics. We preserve the qualities Wagyu is known for—exceptional marbling, tenderness, and rich flavor—while incorporating genetics selected for strong growth, balanced structure, consistency, and carcass quality. The result is a well-rounded animal that combines outstanding eating quality with the strength and performance needed to produce exceptional beef.

Order Timeframe, Weights, and Miscellaneous Info

For orders of half or whole cows, we provide the option for our customers to come see our cows in person, and if available, to choose the cow they would like for processing.

Hours for purchasing individual cuts are 9:00am to 7:00pm, Monday through Saturday, by appointment only.

Individual cuts are kept in stock most of the time. Call us to verify if we have your preferred cut(s)! While we do our best to consistently have availability of larger quantities, time frames for half to whole cows can range from 6 to 12 months.

Estimated Weights per Cut:

  • Roasts: Up to 3 lbs.

  • Steaks: From .75 lbs. to 1.25 lbs.
  • Ground Beef: 1 lb. packs
  • Brisket: From 8 to 12 lbs.
